Enchilada Sauce
This Mexican inspired enchilada sauce completely blows anything you can buy off the shelf away. The rich combination of flavors in this sauce makes it ideal for many Mexican entrees.
Ingredients
- 2 tbsp Butter
- 2 tbsp Flour
- 3 tbsp Chili Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Cumin
- 1/4 tsp Salt
- 2 cups Chicken Stock
Instructions
- First, preheat a medium skillet to medium-low heat.
- Then, combine the chili, garlic, and onion powders in a mortar with the cumin and salt.
- Next, mix the butter and flour together until all of the butter melts and it forms a paste.
- At this point dump the spices in, and quickly stir them into the paste.
- Then, slowly begin adding the chicken stock, eliminating lumps as you go.
- Once you combine all the stock and spices, you should have a somewhat watery sauce. Allow it to simmer on low heat, stirring occasionally for about fifteen minutes.
- Finally, remove the sauce from the heat and use for whatever recipe you need.

I grew up in Colonia Juarez, Chihuahua, México, where people either owned cattle ranches or fruit orchards. Much of my work ethic came from working on Rancho La Mesa (my family’s ranch). That ranch also sparked what grew into my wild imagination. I read somewhere that you should write the story you want to read, and that stuck with me. My writing began in sixth grade, around the time I began learning to type.
